Why some of our sauces use Xanthum Gum.


Here at East Coast Sauces, we're all about transparency. We list every ingredient on our label, and today, we want to shed some light on an ingredient that sometimes gets a bad rap: xanthan gum.


We understand that some folks might be wary of unfamiliar ingredients. But fear not, xanthan gum isn't some scary chemical – it's a natural thickening agent derived from a friendly bacteria called Xanthomonas campestris.


Production Process of Xanthan Gum:


  1. Producers cultivate Xanthomonas campestris (commonly found on the leafy surfaces of various vegetables like broccoli, cabbage, and cauliflower) through a fermentation process similar to yogurt or cheese production. The bacteria feed on sugars, typically derived from corn, wheat, or soy.

  2. During fermentation, the bacteria produce a gooey substance – that's xanthan gum!

  3. The xanthan gum is then separated from the bacteria and other cellular material through a process of separation, purification, and drying.

  4. Finally, the xanthan gum is milled into a fine white powder, ready to be used.



Why We Use It.

These are the real culprits when it comes to unhealthy additives. We steer clear of them, focusing on natural ingredients that you would normally have in your pantry, that also deliver both flavor and function.
