As we’re growing, one of the critical decisions we faced in the beginning was whether to produce our sauces in-house or partner with a co-packer. After careful consideration, we chose to collaborate with Craft Cannery in Bergen, NY. Here’s why we believe this was the best decision for our company and our customers.

When we first started, the idea of crafting our sauces in a commercial kitchen (or our apartment) right here in Raleigh seemed appealing. There’s something inherently satisfying about producing your products from start to finish under your own roof. However, as we delved deeper into the logistics, we realized that the in-house route came with significant challenges.


Scale and Consistency.


Producing in-house would require substantial investment in equipment and facilities. Ensuring consistency in every batch would be crucial, but with limited resources and varying batch sizes, maintaining that level of quality would be challenging.


Specialized Production Needs.


Our sauces are unique, particularly because we incorporate bone broth. This requires specific licenses and equipment to handle properly and safely. A commercial kitchen rental might take us more time to get the legal documents needed to produce our sauces consistently and safely.


Focus on Core Competencies.


We wanted to focus on what we do best—creating innovative recipes and connecting with our community. We develop and experiment with our recipes here in Raleigh then send them out to craft to produce. Handling the complexities of manufacturing could divert our attention from our core mission.
